I can't do, for the moment, without whatsapp in my phone. Is there a way to protect my privacy or, at the very least, limit how meta can get information from me? something like "Facebook Container" but for Android and Whatsapp?

You have no privacy with any Meta app. Do you see that report button in WhatsApp? It works

People think end-to-end encryption means their data is encrypted between themselves and the other person. That is how it should work.

But that is a liability Meta will not take. We are, after all, are responsible for anything that takes place on our platform. Our end-to-end encryption is between you, our servers, and the other person. It's encrypted enough that others can't see, but not from us

I’m not trying to be provocative, it’s a genuine question. Does that mean this screen is just flat out lying to me ?

Yes. Many corporations, Meta included, hide the true details in their fine print, which they count on most people not reading. Meta, in particularly, hides their details in a mountain of fine print that you could spend hours combing through whatsapp.com/legal/
The title screen you shared amounts to good marketing and advertisement. Nothing more.
