Dear ones, its another day of all temps above 20C and highest temps above 30. This month and last month's average temps are 4C above long term average.
It seems that it will be a few degrees cooler tomorrow, and small amounts of rain are still possible over Easter. We have our fingers crossed.

Unknown parent • • •I've made this ⬆️⬆️⬆️ pickle at last, with 3 makrut limes. 3 looked enough as I was cutting them, but of course they cooked down. Never mind, it was an experiment anyway, to see whether they would be a little less bitter than other times I have pickled makrut limes.
They will be spicy!

in reply to Ganga • • •I had forgotten how many pips that makrut limes have. These are from 1 lime. And makrut aren't that large!
Soaking now overnight, and the liquid will be briefly boiled tomorrow before freezing. Makrut lime seeds have amazing pectin. I mean AMAZING. I'll add the pectin when someone offers me fruit and I make jam for them.

Yes, tons of limes from 1 tree. Mine is in a pot, and is maybe 2 metres tall. More fruit on it, in multiple fruiting seasons, than I can use.

I like the taste but it is overpowering
The zest and juice freezes for use in Thai curries
I have made marmalade jam with them in the past but don't love the jam
I've also used small quantities of the juice to make chilli lime cordial which wasn't bad (standard limes were also used in a greater quantity)

in reply to Citizen ❎️❎️ • • •@AnnonBudgie I was looking at other pickle recipes for sour citrus, but the only one apart form the one I made today, that seems to moderate the bitter/sour is a sweet one with jaggery, but the pickle only lasts a couple of weeks. It still might not have a good taste if your marmalade was not up to scratch. I'd try it, except (trying to be) sugar-free atm.
I like the leaves, but I think the fruit will remain a mystery.
